On the left are the libraries. Choose a library and then choose an instrument. The instruments all have .nki file extensions. When you double click on them, you get further controls to modify the sound. These adjustments will apply to the parts in Finale. If you have many parts, it is useful to notice that the instrument list assigns a channel number to each instrument on the far right of the table.
