Best part was, it\u00a0<em>tasted<\/em> amazing too! Win-win.<\/p>\n<p>So basically you make a double crust, opening it up to a bit wider than one would for a pie in a pie plate. On the bottom crust you put your spinach-ricotta-spices mixture in a pattern like this:<\/p>\n<p><a href=\"http:\/\/sites.williams.edu\/lifeofpie13\/files\/2014\/01\/20131117-sunny-spinach-pie-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-33\" src=\"https:\/\/sites.williams.edu\/lifeofpie13\/files\/2014\/01\/20131117-sunny-spinach-pie-1.jpg\" alt=\"20131117-sunny-spinach-pie-1\" width=\"960\" height=\"720\" srcset=\"https:\/\/sites.williams.edu\/lifeofpie13\/files\/2014\/01\/20131117-sunny-spinach-pie-1.jpg 960w, https:\/\/sites.williams.edu\/lifeofpie13\/files\/2014\/01\/20131117-sunny-spinach-pie-1-300x225.jpg 300w, https:\/\/sites.williams.edu\/lifeofpie13\/files\/2014\/01\/20131117-sunny-spinach-pie-1-400x300.jpg 400w\" sizes=\"auto, (max-width: 960px) 100vw, 960px\" \/><\/a>Then lay the top crust over it, tucking it in around the central mound of filling, and making sure the outer edges line up with one another. Use a bowl to shape the dough over the central mound (it&#8217;ll give it a nice dome shape). Moisten the edges of the two layers and use a fork to crimp them together.
